the fryer with the largest tank. Think about what you cook, how much
you need to produce during your busiest service and the utilities

Capacity is only part of the picture
Tank and oil capacity are useful specifications, but they should
not be treated as a direct measure of how much food a fryer can
produce. Where available, check the stated food capacity or output,
alongside the tank size, power and basket configuration. This gives
you a better basis for comparing fryers for your expected workload.
Check the services available
Before choosing a model, confirm what your kitchen can support.
Commercial electric fryers range from smaller plug-in equipment to
higher-powered models requiring dedicated or three-phase supplies.
Gas equipment may require natural gas or LPG. Always check the
connection stated on the individual product before ordering.
Think about day-to-day use
The specification that matters most depends on how the fryer will
actually be used. Consider the number of tanks and baskets, available
working space, temperature controls, drainage and oil management,
as well as the physical dimensions of the equipment. These practical
details can be just as important as overall capacity.
